Crustless Spinach Quiche and Whole Wheat Bread ( Family Dinner Idea)

Crustless Quiche is one of the easiest recipes ever! You can customize it to your family’s preferences (and based on what leftovers you need to use up). You can mix up the vegetables (think chopped broccoli, mushrooms, roasted peppers and onions, etc) and use whatever kind of cooked meat you prefer (sausage, turkey, etc). 

Shredded cheese is a wonderful addition (just throw in a cup or so before you bake it), but we have some newly-discovered dairy sensitivities at my house, so I opted to skip that possibility.

This easy whole wheat bread recipe has been my standard go-to recipe for many years if I want to make something healthy but with minimal ingredients and prep time. It is so simple – the bread machine does all of the work! I grind my own flour (using organic white winter wheat) but you can use any combination of white/whole wheat flour. I use 8×4 loaf pans to get nice, rounded loaves of bread. Slather warm slices with butter and yum!

Easy Whole Wheat Bread 

Ingredients for spinach quiche are arranged on a wooden table.

Ingredients for Crustless Spinach Quiche and Whole Wheat Bread*:

1 dozen eggs (Aldi – $1.96 for 12) — $1.96

1 1/2 cups milk (Aldi – $3.05 for 16 cups) — $0.29

1/2 lb chopped deli meat, or meat of choice (Aldi – $3.99 for 16oz) — $2

1-2 cups chopped fresh spinach (Aldi – $1.99 for 8oz) — $1

Salt, pepper, Italian seasoning

1 cup plus 1 Tablespoon warm water

1 Tablespoon coconut oil (Aldi – $5.49 for 14oz) — $0.19

1 Tablespoon olive oil (Aldi – $7.25 for 33 tablespoons) — $0.22

2 Tablespoons honey (Aldi – $4.99 for 24oz) — $0.20

3 cups whole wheat flour (Lidl – $2.99 for 18.75 cups) — $0.48

1 Tablespoon instant active dry yeast (Sams – $6.88 for 2lbs) — $0.08

Total for Dinner: $6.42 (Serves 6)

*Note: Some of these things I got cheaper than the prices listed by using coupons or shopping markdowns. That’s why you’ll see Nellie’s eggs instead of Aldi brand eggs in the picture, etc. But since not everyone is able to shop the same markdown prices, I’ve used standard prices at chain grocery stores when calculating my total price for dinner.

How to Make Crustless Spinach Quiche and Whole Wheat Bread:

1. Follow the instructions here for making Easy Whole Wheat Bread in the bread machine. (Note: I always double the recipe and make two loaves.)

2. While the dough is in the bread machine, whisk together the eggs and the milk in a large bowl.

3. Mix in the chopped spinach and deli meat, seasonings, and any other additions you prefer (like shredded cheese). Pour into a greased 9×13 pan and stick in the refrigerator until ready to bake.

4. When the dough cycle is finished, transfer dough into a greased loaf pan (or two loaf pans, if you’re doubling the recipe). Let rise for 30 minutes, as written in the recipe.

5. Preheat the oven to 350 degrees. (Note: If you are letting your dough rise in the oven, make sure you remove the pans before preheating the oven… not that I’ve ever made this mistake, of course!)

6. Take the quiche out of the fridge and bake it for 40 minutes in the preheated oven, or until set. 10 minutes after you put the quiche in the oven, stick the bread in the oven also and bake it for 30 minutes.

Instructions

Put all the bread ingredients in the bread machine, in the order listed, or in the order recommended by your bread machine model.
Run the dough cycle.
While the dough is in the bread machine, whisk together the eggs and the milk in a large bowl.
Mix in the chopped spinach and deli meat, seasonings, and any other additions you prefer (like shredded cheese).
Pour this mixture into a greased 9×13 pan and stick it in the refrigerator until ready to bake.
When the dough cycle is finished, transfer dough into a greased loaf pan (or two loaf pans, if you’re doubling the recipe). Let rise in a warm place for 30-40 minutes.
Preheat the oven to 350 degrees. (Note: If you are letting your dough rise in the oven, make sure you remove the pans before preheating the oven… not that I’ve ever made this mistake, of course!)
Take the quiche out of the fridge and bake it for 40 minutes in the preheated oven, or until set. 10 minutes after you put the quiche in the oven, stick the bread in the oven also and bake it for 30 minutes (I recommend you cover the bread with foil after 15 min. to prevent over-browning).
Let the bread sit for 10 minutes after coming out of the oven, then remove the bread from the pan and cool on a wire rack.
